 | | | | |  | |  | | | | | | When Aurion was established in 1974, one of the bakers thought it cannot be right that birds should die because we humans used insecticides in order to produce more effectively. Still today, he cannot understand why. Therefore, Aurion’s grains and baking products are now as well as then, cultivated bio-dynamically and organically.
Through the years, the bakery has presented a large range of grains, which they use in their baking and sell to professionals and people who bake at home. The products are genuine craftsmanship produced in the old-fashioned way. Aurion still goes against the flow and continues to focus on the old grain types, such as:
• Spelt • Einkorn • Emmer wheat
However, at Biofach they will focus on quinua, which is a seed well suited for, e.g. porridge and bread but which is also used as a replacement for rice and paste or to use in salads and soups. The name quinua means “Mother Grain” in the Indians’ language in Bolivia from where the seed originates. Through the aid organisation, Carita, and with support from Danida, the bakery cooperates with a farmer organisation and a partner in an overlooked and poor corner of Bolivia. The cooperation ensures the poor farmers a fair price for their seeds and in return, Aurion and their customers in Scandinavia receive tasty and optimal provisions.
