Nordic Organics

This year, Denmark, Sweden, Finland and Norway have joined forces under the banner of Nordic Organics.
This concept of close collaboration between the Nordic countries has been developed based on the New Nordic Cuisine.nord_nr_gb_web


The New Nordic Cuisine – what’s that?
In November 2004, a number of top chefs and food professionals created a ten-point manifesto for the New Nordic Cuisine. The essence of the manifesto is: purity, simplicity and freshness. Menus and recipes must take their inspiration from traditional Nordic dishes, and ingredients must benefit from the
special conditions of being cultivated and produced in the Nordic climate.

Purity: The Nordic landscape is characterised by wide, open spaces with
clean air and clean water. Wild berries, fruit and mushrooms, as well as fish, etc., are important ingredients in the Nordic cuisine.

Simplicity is characteristic of Nordic cuisine, in contrast to Italian and French cuisine, for example. Nordic cuisine is based on fewer ingredients and more on high-quality ingredients cultivated in the special Nordic climate, which significantly influences the flavour.

Freshness: The short summer and hence the short growing season results in a brief explosion of fresh ingredients ranging from fish and chicken to wild berries and fruit. As a result, during the summer season, we are able to quickly put together a veritable feast, often to be enjoyed in the great outdoors. In the Nordic region, we have long, dark winters, which have made us into experts at different ways of preserving food in order to store the summer ingredients.
