Spent Grain Bun

Upcycled sourdough bun baked with reused mashed barley kernels from organic Danish IPA beer. We mix IPA spent grain flour, rye sourdough, and Nordic whole grain wheat and let the dough ferment cool overnight. The long, cold fermentation gives a moist crumb with a deep grain flavor and light bitter and sweet beer notes.
