Danbo - the most popular cheese in Denmark – but a type of cheese that is not known very many places in the world, apart from the closest export markets: Norway, Sweden and Germany.
The Danbo cheese can have different ripening times depending on if it´s a mild or matured cheese, and is characterized by a soft and supple texture with a limited number of regular holes. The cheese crust shows signs of red smear ripening. Fresh taste with clear notes of red smear. An increasing mature and sharp taste when aging.
