Sfogliatina Rustico is an oblong, hand-formed sourdough sandwich baked with Italian Tipo 0 wheat flour and Sicilian durum wheat flour. The sourdough is mixed with the flour and flaxseeds, which, together with the long fermentation time, gives a sandwich with a distinctive crust and a flavorful, moist crumb.
